Organic Pork Japchae

Ingredients

Japchae Base

  • 2 packs The Han Kitchen Organic Glass Noodles (120g each)
  • 1 onion, sliced
  • 1 handful of carrots, julienned
  • 1 handful garlic chives, cut into lengths
  • 200g pork (loin, tenderloin, or top round), cut into thin strips

Pork Marinade

  • 2 tbsp soy sauce
  • 1 tbsp mirin

Japchae Sauce

  • 300ml water
  • 6 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sugar
  • 2 tbsp cooking oil
  • 2 tbsp sesame oil

Directions

  1. Soak 2 packs of The Han Kitchen Organic Glass Noodles in cold water for 1 hour, then drain well.
  2. In a bowl, combine 200g pork with 2 tbsp soy sauce and 1 tbsp mirin. Mix thoroughly and let it marinate while preparing the other ingredients.
  3. Prepare all vegetables: slice 1 onion, julienne 1 handful of carrots, and cut 1 handful of garlic chives into bite-sized lengths.
  4. Heat 2 tbsp of cooking oil in a pan over medium heat. Add the marinated pork and cook until nearly done. Add onion and carrot, then stir-fry until softened. Transfer to a plate and set aside.
  5. In a large pan or pot, add 300ml of water, 6 tbsp of soy sauce, 2 tbsp mirin, 2 tbsp sugar, 2 tbsp cooking oil, and the soaked noodles. Cook over medium heat for about 4 minutes, stirring continuously until most of the liquid is absorbed.
  6. Return the cooked pork and vegetables to the pan. Drizzle with 2 tbsp sesame oil and toss everything together until evenly combined.
  7. Add garlic chives, mix gently, and serve warm.
