Japchae Sauce
- 300ml water
- 6 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sugar
- 2 tbsp cooking oil
- 2 tbsp sesame oil
Directions
- Soak 2 packs of The Han Kitchen Organic Glass Noodles in cold water for 1 hour, then drain well.
- In a bowl, combine 200g pork with 2 tbsp soy sauce and 1 tbsp mirin. Mix thoroughly and let it marinate while preparing the other ingredients.
- Prepare all vegetables: slice 1 onion, julienne 1 handful of carrots, and cut 1 handful of garlic chives into bite-sized lengths.
- Heat 2 tbsp of cooking oil in a pan over medium heat. Add the marinated pork and cook until nearly done. Add onion and carrot, then stir-fry until softened. Transfer to a plate and set aside.
- In a large pan or pot, add 300ml of water, 6 tbsp of soy sauce, 2 tbsp mirin, 2 tbsp sugar, 2 tbsp cooking oil, and the soaked noodles. Cook over medium heat for about 4 minutes, stirring continuously until most of the liquid is absorbed.
- Return the cooked pork and vegetables to the pan. Drizzle with 2 tbsp sesame oil and toss everything together until evenly combined.
- Add garlic chives, mix gently, and serve warm.
